Mint lemonade

 

We’re still in May, but in Spain, it already feels like summer. This is the time of the year when my house smells like mint, and it’s so refreshing that I make it every two or three days.

 

 

INGREDIENTS

  • 10 lemons
  • 2 bunches of mint
  • 1 C of granulated sugar (U.S. measurement)
  • 1,5 l / 50 oz water (U.S. measurement)

This will make you 2 l / 68 oz of lemonade, approximately.

 

 

DIRECTIONS

 

1.- Juice 9 lemons and quarter the remaining one.

 

2.- Separate the leaves from the stems and wash the leaves well.

 

3.- Put all the ingredients in a food processor (except water) and blend everything into a puree. When you think you’ve finished… blend more! :) The more you blend the leaves, the tastier it’ll be.

 

4.- Strain through a colander, add the water, mix well and add more sugar if necessary.

 

 

Chill well before serving, relax and enjoy this refreshing drink.
